The paperwork is small and mandatory. Australia wants an ETA, applied for in its official app for AUD 20. New Zealand wants an NZeTA plus a NZ$100 International Visitor Levy, paid together before you fly. Neither takes long; both are refused at the gate if missing.
Biosecurity at both borders is the strictest you will meet, and it applies to the Tasman crossing as well as to arriving from home. Declare food, and expect hiking boots to be inspected and possibly cleaned. The fine for not declaring is not a formality.
